Menu #2

Funny thing. The menu from last week ended up significantly different than as written. But, basically it just got switched around and I do have a little left over for this next week, so as a tool, the menu was quite helpful. The hit of the week was the Veggie Lasagna. I made double portions so we could have left overs, and only 2 pieces were left. And it was requested again this week. I am not making it this week, but will probably do it next week. Flub of the week - I forgot we were invited to dinner Monday night, so that meal got shifted to Tuesday, and then a few other changes were made. But, no harm done.

Now, for the week of October 1 - October 7.

Sunday


Pizza (again, brunch is served at church after Divine Liturgy. This week my contribution will be Biscotti)

Monday


Breakfast - Baked Oatmeal with dried cherries and pecans
Lunch - Meat and cheese sandwiches and veggie/bean soup
Snack - crackers and cheese
Dinner - 40 Garlic chicken, salad and bread

Tuesday


Breakfast - Scrambled eggs in tortilla, OJ, Hot tea
Lunch - grilled cheese and tomato soup
Snack - granola and yogurt
Dinner - Chili and cheese, carrots and broccoli

Wednesday


Breakfast - pancakes and fruit
Lunch - Leftover veggie soup and bread
Snack - friut and breadsticks
Dinner - Sauteed (Frozen) spinach with garlic, lemon juice and olive oil and garbanzo beans in a pita. Served with fruit

Thursday


Breakfast - Bacon, eggs and toast
Lunch - sub sandwiches and veggie sticks
Snack - yogurt and granola
Dinner - Pot luck at church between the chidren's choir and youth group. I will bring pasta salad

Friday


Breakfast - cold cereal and fruit
Lunch - PB & J sandwiches, potato chips and carrots
Snack - granola bars
Dinner - veggie soup and bread.

At some point this week I will use up the rest of my rhubarb and make a cobbler. And we have tons of banana's now, and will undoubtably be making some banana bread this week.

Saturday


Breakfast and lunch are whatever People Can Find
Dinner - Pot roast, shredded, on sandwich rolls. Mac and cheese, creamed spinach (frozen).

Okay, that about does it. Tuesday and Wednesday have to be "prepare ahead" or "super quick" dishes because I am gone in the afternoons those days.

Thursdays every other week we have choir, communal meal and youth group at church. Can you see that eating together is important at our church? It's difficult to have communion without community!

My First Menu, for the week of September 24-October 1

So this is my attempt at meal planning. Some of my readers at crazyacres asked to see what sort of menu I came up with, so here it is. I already did my grocery shopping for this menu, so there is no reason I can think of at this time why this shouldn't work. But then, there's always the unexpected...

Sunday

- We only eat dinner at home as brunch is served at church following Divine Liturgy. I am bringing an egg/bacon/cheese strata to share.
Dinner will be Pot Roast with roasted green beans, carrots, onions and potatoes.

Monday


Breakfast - Cream of Wheat and bananas, OJ, and hot tea
Lunch - Meat and Cheese sandwiches, popcorn, carrots
Snack - yogurt and granola
Dinner - Stuffed meatloaf, potatoes, asparagus

Tuesday


Breakfast - cold cereal with fruit, OJ
Lunch - Tomato Soup and grilled cheese, carrot sticks, apples
Snack - popcorn
Dinner - Hamburgers, mixed veggies, red beans and rice.

Wednesday


Breakfast - english muffins and peanut butter, OJ, tea
Lunch - tuna salad sandwiches, fruit and veggies
Snack - pretzels and cherry cider
Dinner - veggie lasagna


Thursday


Breakfast - Fried eggs and bacon with toast, OJ and hot tea
Lunch - ***Leftovers***
Snack - Cottage cheese with fruit
Dinner - Tacos

Friday


Breakfast - Hot Oatmeal with dried cherries, pecans and brown sugar, OJ, hot tea
Lunch - Peanut butter and jelly sanwiches, apple sauce, raw veggies
Snack - dried fruit and crackers
Dinner - Veggie and bean soup with bread, milk and hot tea.

Saturday is a free for all food-wise. Dinner is usually left-overs (again) or pizza or some other quick, easy, use-up-what-we-have type deal.
